Tasty Summer Puddings - Mango And Oat Pudding, Layered Summer Pudding

Nothing is more comforting like a creamy warm pudding which is one of the easiest and satisfying ways to end a family meal. What a heavenly feeling it is when the layered summer pudding with the perfect combination of fresh fruit and jelly touches the palette with the first spoon. Packed with tropical flavor of mango and oats, mango and oat pudding is healthy and delicious.

Layered Summer Pudding:

Ingredients required:
•    250g strawberries
•    200g blueberries
•    150g strawberry jelly
•    200g raspberries
•    100g blackberries
•    10 slices of white bread
•    50g castor sugar
•    450g loaf tin

Method:
•    In a pan, gently cook strawberries, blueberries and blackberries along with sugar and water for five minutes.
•    Remove the pan from heat and take the liquid after straining the fruits and boil it.
•    Remove the liquid from heat and stir-in the jelly until dissolved and then allow it to cool.
•    Place the jelly in the refrigerator and let it cool for five minutes and then mix it with the fruits.
•    Cut the bread slices in half and layer the bottom 450g loaf tin, overlapping the slices.
•    Now place some of the fruit on top and level off, top with another layer of bread and then some more fruits and finally finish the dessert with a layer of bread.
•    Push the bread down to soak well in the juice, cover the dish with a foil and place it in the refrigerator for an hour. Before serving cut the pieces into half.

     Mango And Oat Pudding:

     Ingredients required:
•    1 cup mango purée
•    50g butter
•    1 tsp brown sugar
•    ½ tsp baking powder
•    75g castor sugar
•    1 cup roasted oats
•    1 cup bread crumbs
•    ½ tsp star anise powder

Method:
•    In a container beat butter with sugar until it turns fluffy and then add star anise powder and beat again.
•    To this mixture add mango purée and roasted oats and mix well, add fresh bread crumbs and sprinkle some baking powder. Beat all the ingredients thoroughly.  
•     Take a greased eight inch dish and spread this mixture and sprinkle brown sugar and microwave without covering for four minutes.
•    Take it out from the microwave and let it sit for five minutes and serve it hot or cold with some mango and any other choice of toppings.
